The newest restaurant to open on the west coast is Local & Co (The Local). This farm to table restaurant, drinkery and marketplace is located in a lovingly restored 18th Century building right on the beach in Speightstown.
Their whole concept is bringing the farm to the table by dishing up good food in collaboration with local farmers, fishers, and vendors, and using the best local produce in a fresh style of cookery. Everything is made in-house and what cannot be sourced in Barbados is sourced from neighbouring islands.
The Marketplace showcases as many local artists as possible offering craft made goodies – from jams, spices, plates, baskets, beauty products, jewellery & dresses – all made by hand in Barbados.
At The Rum Bar, they have curated some of the finest rums from all over the Caribbean and will continue to build up a worthy collection. This is a place where you can enjoy vintage rum cocktails, good music and bar snacks. They have also developed their own exclusive rum infusions with local botanicals & herbs.
